This screencast shows you how Views Bulk Operations leverages this in order to have check boxes as a field in the view, rather than overriding the entire view style (as was the case in Drupal 6). You could also imagine having form elements for selecting "X" number of an item to add to your shopping cart, or display as editable form elements.
I am pretty sure that with this functionality in Views, we will be able to find a number of new and powerful use cases – things haven't thought about yet, since we are too used to Views displaying values rather than editable elements.
